I LOVE our pancake recipe! It is quick, easy, pretty healthy (<2 points per 6-7” pancake), and adaptable (we add fruit or M&M’s for birthdays.  Here was my diet breakfast: 3 pancakes, redi whip, and 1 cup of fruit – 6 points total!! It is easier to stay on a diet when my family & I are enjoying what we are eating!!January 2012 1506

Beth’s Perfect Pancakes

  • 1 egg

  • 2 TAB veggie oil

  • 1 cup flour

  • 3 teas baking powder

  • 1 cup 1% milk

  • 1/4 teas salt

  • 1 TAB sugar

  • Fruit (optional)

Beat ingredients together & cook on sprayed griddle. We mix it up by adding fruit, M&M’s for birthdays, or making them in pancake molds. This basic recipe makes 11 6” pancakes. So it is great for 2-3 people. Just make a double batch for 4-5 people. <2 points for 1 pancake.
