Info Post

As we are traveling around the world this week making an apple we are stopping in Italy, France, England, Sri Lanka, Jamaica, and Vermont. We are doing a variety of fun activities for each country, which I will post about at the end of the week, and we are eating food from that country. Yesterday we explored Italy & had a yummy Italian dinner. I though you might enjoy some delicious new recipes from a country known for great food – ITALY!

October 2011 015Tomato Basil Salad

  • 10-20 Cherry Tomatoes
  • 1/3+ cup Fresh Oregano, chopped
  • 1/2 lb Fresh Mozzarella (not the stuff in hard blocks) – cut/cubed
  • 1-2 TAB Olive Oil
  • Salt & Pepper
  • 1/3 cup Balsamic Vinaigrette dressing (I like Wishbone)

In Tupperware mix all ingredients & toss to coat. Cover & refrigerate to blend flavors 4-24 hours. So simple, so delicious! You can get mozzarella balls that are pre marinated, but these are so simple. You can make it more elegant by putting the ingredients on a tooth pick to serve.

  • 1/4 cup flour
  • 1/2 teas salt
  • 1/4 teas pepper
  • 1/2 teas dried oregano
  • 4 chicken breasts
  • 4 TAB olive oil
  • 4 TAB butter
  • 1+ cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/4 cup cooking sherry

In shallow bowl mix together flour, salt, pepper, and oregano. Coat chicken pieces in flour mixture. I large skillet: melt butter in oil over medium heat, place chicken and lightly brown, add mushrooms, and pour wine & sherry over top. Cover skillet and simmer chicken 10 minutes (the alcohol cooks off). Serve with linguini.

I used this wonderful recipe. If you haven’t checked out allrecipes you really should. They have TONS of wonderful FREE recipes. What I like the best is that people rate the recipes. If 207 people give something 5 stars they can’t be wrong can they?!?

I topped the breadsticks with this amazingly wonderful garlic butter. Best garlic butter I’ve had & oh so very, very easy!!
