Goofy at Apple Orchard, 17 months oldThis is a recipe my family waits for all year long - we LOVE it! It is delicious, unique, hearty, and seriously yummy!! There is something about the combination of sausage, cider, allspice, and apples that just makes my taste buds dance! Try it & it may just become one of your families favorite for Fall too!

 Early Autumn Stew

  • 1 lb sausage
  • 1 1/2 cup apple cider
  • 2 pinches allspice
  • 1 bay leaf
  • 3 carrots, cut
  • 2 TAB olive oil
  • 3-4 cups chicken stock
  • 1/2 cups craisins
  • 4 Apples (like McIntosh), cut
  • 4 celery stalks, chopped
  • 1 large onion, chopped
  • 4 springs thyme

1 loaf of bread for dipping Cook sausage in skillet. In stock pot put olive oil & over medium heat cook onion, carrot, celery, bay leaf, thyme, and salt & pepper (several dashes of each). Cook until they begin to tenderize, 6-8 minutes. Add apples, allspice, and craisins; cook until veggies are very tender, another 3-5 minutes. Deglaze pan with cider, scraping the bottom. Add chicken stock & sausage. Bring mixture to a boil; reduce heat & simmer 8-10 minutes. Pull out bayleaf & serve with bread. Makes 6-8 servings.
